The only thing we add is yeast - and gentle force to push the grapeskins back into the fermenting must. Around 900-800 Liters yield from the 900 Vines make for a great structure and natural ripeness.   #merlot   #merlotme

Opposing to the weather forecast today brought a few hours of sunshine and most importantly no rain. The next days has some downfall forecast again, and it looks like the temperatures will remain around a very critical 15° C for the next week. Growth of the vines has crawled to a small halt, on the plus side this might strengthen the resilience against fungal diseases like pero, and give us some time to finish the debudding of the vines before flowering. But the danger of having low temperatures and lots of downfall during flowering is still there.

Tonight is the night, if everything goes smooth and the temperatures continue to fall to around -7 to -8 Degrees Celsius, we'll be able to harvest a small but definitely interesting yield of ice-wine tomorrow!

We're happy about our first invitation to the Falstaff Rotweingala 2012 in the Wiener Hofburg, and the rating of 94 points in the Falstaff Reserve Trophy for our Merlot 2008 !
