My Ultimate Burger!
 
Savacool Secviar’s 4th of July Burger

Ingredients
•1.5 lbs  Ground chuck 
•Fresh ground pepper and Sea Salt, to taste
•4 Burger Buns, split & definitely toasted (Wonder buns don’t cut it, support your local bakery)
•4 slices Smoked cheddar (we recommend) Gouda or Blue are excellent choices too
•Thick cut bacon (skip the pre packaged, head to the counter or better yet the butcher)
•Arugula
•1 Shallot, sliced (Pickled shallot! all you need is distilled vinegar, water, salt & sugar... keep it simple) 
•Dissolve 1-2oz salt, 6oz of sugar into 1.5 cups of distilled vinegar & .5 cup of water, pickle overnight if possible
•Mayo (yea the banality that is mayo, blend it with some garlic and call it Aioli ) We make our own!



Set the oven to 400 F, place thick bacon on a baking sheet and pop in for 17-20 minutes, depending on how efficient your oven is. A good rule of thumb is, when the aroma of bacon awesomeness feels your home, it’s typically time to pull out. Eyeball it, just don’t burn it!

Divide the ground chuck in four equal portions of about 6oz each. Form the patties into 3/4 inch thick discs, pressing your thumb into the middle making an impression (it will rise during the cooking). Season both sides with salt and pepper.

Get those coals white hot and glowing; brush the grill with oil. We’re going for med-rare here, so grill for 3 minutes on side one, getting a nice char. Flip, and continue to cook for another 3, adding the cheese and continuing to cooking for another minute. (cooking time of 7min)

Let REST and toast buns!

In the spirit of the 4th, assemble the burger as you see fit. If you feel the need to put the arugula and onion on the bottom, go nuts; today is especially the day to exercise those freedoms, we won’t judge...Enjoy with a cold one and appreciate the little things on this day independence.
