Monica's Brown Bread/Scones recipe

Preparation time 10/15 minutes
Pre-heat oven to 190C
You will need a Mixing Bowl and a Wooden Spoon

Ingredients
500g Whole Wheat Flour
200g Strong White Flour
1 litre Buttermilk
2 tablespoons Sunflower Oil
3 level teaspoons Bread Soda
1 big tablespoon Treacle Molasses
200g mix of Wheat Germ, Oat Bran and Wheat Bran

Method
Mix all dry ingredients together first then add all liquids and mix thoroughly.
To make 1 loaf of bread, put the mixture in a greased loaf tin and cook in oven for 50 minutes to 1 hour.
To make scones shape the mixture into 12 and put in the oven for 20 - 25 minutes.

Eat warm with butter/cream/jam or for a snack at lunch/breakfast with smoked salmon, capers and scrambled eggs

Things to do in Waterford County #2: Woodstown Strand

If you wish to visit a beautiful, natural beach why not have a look at Woodstown.
The beach is 3km long with lovely sand and a handily placed pub/restaurant where you can stop for some light refreshment. This beach is unusual in that it is situated not on the coast but near the mouth of the River Suir, the river that runs through Waterford city. When the tide is in you can still walk along a sandy crescent of beach but when the tide is fully out the beach extends up to 1km into the river where it meets the oyster beds being farmed locally. Woodstown is famed for the quality of its delicious oysters.
It is only 12kms from the school gates and is a perfect place to relax after class. It can easily be reached by car or if you are feeling adventurous why not rent a bicycle and cycle there, it should only take 30 minutes for a competent cyclist.

Things to do in Waterford County #1: The Mahon Falls
 
For those students interested in nature and exploring further afield, Waterford city is an ideal base. The Mahon Falls are an 80m waterfall in the Comeragh mountains (approximately a 30 minute drive away). There is a car park nearby with a well maintained walkway through beautiful hills covered in mountain sheep, which takes you to the foot of the falls. The scenery is breathtaking and on a good day you can see the Atlantic Ocean. Be sure to wrap up warm even on the brightest of days as the wind can make it quite chilly.
