Honey and Raspberry Cupcakes

* 50g dairy free margarine
* 125ml honey
* 25g sugar
* 125ml rice dream
* 150g self raising flour
* 1/2 tsp baking powder
* 1/4 tsp salt
* (optional) raspberries to add to each cake before baking (frozen or fresh)

1. Preheat oven to 170c

2. Put margarine, sugar and honey into food processor or bowl and blitz/ mix until combined and creamy.

3. Add the flour, baking powder and salt then a little rice dream alternating until both are incorporated and you have your finished cake mixture.

4. Fill cupcake cases to about 3/4 full adding the raspberries if desired.

5. Bake for approximately 20 to 30 minutes until risen and golden. Leave to cool completely before icing.

It is the first time I have used coconut oil in icing. I find that dairy free margarine can impart a slight flavour to the finished icing and can give you a softer finish whereas coconut oil set much more like butter would and is rather neutral in flavour, not a hint of coconut. The raspberries tend to sink to the bottom of the cake which I rather like but my son told me he thought it would be better just plain cake with the icing and no raspberry added so feel free to leave that out if you share his view.he was also the one responsible for the addition of sprinkles.

A creamy dairy-free ice cream suitable for vegans

 The addition of walnuts adds a fantastic crunchy texture, which complements the sweet maple syrup. Remove from the freezer 30 minutes before serving to allow it to soften slightly. Drizzle over a little maple syrup to serve.

I first intended to make these cakes for a Mother’s Day treat. Something sweet and slightly fruity, but then I made them and we ate them all before Mother’s Day arrived.

I also planned on adding rosewater to the cakes and icing to give a floral twist but when I took the bottle of rosewater from the cupboard I found it had expired last year and wasn’t sure it was worth the risk of using it.

So as you do I went with what I had to hand and am pretty happy with the result.

Warmer weather and pretty colours popping up everywhere as Spring takes hold is a breath of fresh air. I definitely seem to change some parts of my diet as the warmer days set in and one thing that features a little more is smoothies, during the cooler months I turn my back on cold drinks/meals but I am welcoming them back with open arms which leads me to a new smoothie recipe I have to share with you my Pretty in Pink Superfood Smoothie!
