Fresh homemade salsa is one of summer's simplest joys - even simpler if you already have leftover salad in the fridge. Chop into small dice and put together in a bowl: Jersey or homegrown tomatoes, onion (Vidalia if you have it), cucumbers, radishes. Add some generous snips of cilantro, a dash of salt, a little lime juice, and hot pepper flakes. (I know, I know ... I didn't have any fresh non-bell peppers.) Give it a stir and let sit a minute or so while you put some Xochitl corn-tortilla chips on a plate. Hello, lunch!
If I'd been more patient, I'd have added some fresh Jersey corn, but I didn't feel like taking the 5 minutes to cook and scrape an ear. Sometimes I am so instant-gratification oriented I sabotage myself. But there's always tomorrow!
