Grate the zucchinis by hand or in a food processor on the finest setting. Put the shredded zucchini in a large sieve and sprinkle with salt. Use your hands to mush the salt into the veg and allow it all to set over a bowl for about 20 minutes. Stir it once in a while and squeeze the liquid out.

be easier to make these, but ...
Use a sharp knife and turn the tube shape into a rectangular shape. This will not only make it easier to cut the polenta into cubes, it will eliminate the coating that exists on the polenta. Cut the polenta into ½ inch cubes. Drizzle with ½-1 teaspoon olive oil. Salt and pepper to taste.

We truly love our K-9 dog fence! Not only does it make our lives easier (no dogs running away!), but the fence creates a place of safety and freedom for our dogs! The owners are always easy to contact, their support has been excellent, they have answered all my tech questions, and their home visits are outstanding..... for example, last week they not only replaced our unit (damaged by lightning, replaced under warranty for free), they did a quick repair on our wire which had come loose in the driveway. So great! I HIGHLY recommend this company.
