Results will be better with bread flour. See my pizza dough Faqs page for more info on flour. It can be reached from the Pizza link at the top of the page. Not sure about your oven question, but my oven heats from the bottom and the broiler heats from the top.

By hot pad, I just meant something to protect the counter. The backing rack is the kind you cool cakes on. The probe takes the temperature of whatever it's in- water or air. If you watch my Croissant video, you can get a better view of the proof box near the end. I also do variations of this set up and you can see one of these in my Broccoli Cheddar Fougasse video.
