DEEP DARK CHOCOLATE MOUSSE

When we want to indulge, we want the best!! And this is the richest most scrumptious chocolate mousse we've ever met --- anywhere. It's a far cry from a light French Chocolate Mousse. We always thought of it as the Americanization of Mousse.
Of course we're very subjective as this was the most popular dessert we made for our little New York shop, The Silver Palate long ago. It dazzled our clients the first day and forever more. Now it's become an internet classic. But it's ours and every bite is filled with memories galore. Of course you can change the Grand Marnier to Frangelico, Amaretto, or even Vin Santo, but the original is still our favorite. I like to serve it in a pretty glass with a dollop of whipped cream softened laced with sour cream. Originally we sprinkled it with candied violets, but today sugared flower petals, fresh mint, red hot hearts, chocolate shavings . . . use your imagination. I promise it will become your new go to chocolate dessert.

1½ pounds semisweet chocolate chips
½ cup prepared espresso coffee
½ cup Grand Marnier
4 egg yolks
2 cups heavy cream, chilled
¼ cup sugar
8 egg whites
Pinch of salt
½ teaspoon vanilla extract

1. Melt the chocolate chips in a heavy saucepan over very low heat, stirring: add the espresso coffee, then stir in the Grand Marnier. Let cool to room temperature.
2. Add the egg yolks, one at a time, beating thoroughly after each addition.
3. Whip 1 cup of the cream until thickened, then gradually beat in the sugar, beating until stiff. Beat the egg whites with salt until stiff. Gently fold the egg whites into the cream.
4. Stir about one third of the cream and egg mixture thoroughly into the chocolate mixture. Then scrape the remaining cream and egg mixture over the lightened chocolate base and fold together gently. Pour into 8 individual dessert cups or a serving bowl. Refrigerate for 2 hours or until set.
5. At serving time whip the remaining cup of cream until thickened, add the vanilla, and whip to soft peaks. Top each portion of the mousse with a share of the cream and a little garnish.

SILVER PALATE'S TURKEY HASH SALAD DECLARED "GENIUS"

Leftovers are something we always love, but we think they are extra wonderful when turned into something completely new and entirely tasty.

What a delight to see the Silver Palate's Turkey Hash Salad declared "genius" by Food52. Nothing against a good bowl of turkey soup, but we think this salad is what you'll be craving after future Thanksgiving feasts!

This salad is exactly what you'll want to eat (and cook) the day after Thanksgiving.

My husband and I were recently married and received a generous gift Certificate for the Wickwood Inn from my Co-workers at Mary Free Bed Rehab. Hospital in Grand Rapids to celebrate our marriage. We booked our room in July and were looking forward to our stay. Unexpectedly, my husbands mother was diagnosed with Pancreatic Cancer the week prior to our Thursday night stay at the Inn. Monday afternoon I contacted the Inn explaining the situation and that we were hoping we could reschedule our stay if possible because she had been admitted to the Hospital Sunday evening with Severe Pain. I was told there would be no refund of our money, at that time I stated, "I am not asking for a refund, but would like to reschedule our stay for another night even off season would be fine with us". Again I was told that was not their policy. My mother in law passed away the next day on Tuesday unexpectedly. We were told she had 6 months or more.. I contacted the Inn 3 times with in the 2 weeks following her passing and was treated with disrespect, rudeness and total lack of compassion by the owner Julie. It was not about money to us, it was about celebrating a marriage, love and enjoying a beautiful gift from many of our friends. I as well s many of my co-workers will not recommend the Wickwood Inn to anyone given the way we were treated, during a time of mourning our loss.

Would have liked to have been able to give Wickwood Inn a great review, as we were more than anxious to stay there. Unfortunately, due to a major coming snow storm, Holland realtors cancelled our house closing. In an attempt to save the $250+ that we paid for our one night reservation, we wanted to change our one night stay into a two night stay in the next 30 days. However, there was no willingness on the owner's part to give us a credit due to the severe storm event, no refund was available and no willingness to use the payment on a 2 night reservation in the near future. In our opinion, living in Michigan comes with winter storm possibilities and we were not asking for a refundm, only a delay in the reservation, the Wickwood Inn will no longer be on our must see B & B list.

We're very sorry the Hallers were unable to join us. Michigan winters can be difficult. The Inn did have several guests that same evening, from the same vicinity as the Hallers, who made the trip and enjoyed their Winter getaway at Wickwood Inn.

I took my mother for a night as a birthday gift. She is 71 and happened to feel very sick through the night. I was a bit upset to find that there was no person responsible (or on duty) who stayed past 9:00 p.m. at this inn. There was no phone in the room in the case I needed to call emergency and I could not locate a phone in the inn even though I looked. Later I found that there was a public phone booth under the stairwell, but since it was covered in advertisements, I did not easily notice it. The gardens and the home were nicely kept and homey, and the breakfast was wonderful. The service, however, was businesslike rather than warm and friendly. When I made my reservation, I had requested the picture of the room that looked the most cheerful and bright with flowery blue pastels. So it was a surprise to me to be placed in the room we were placed in. The room did not look at all like the room I had requested. It was a bit dark and manly and the paintings on the walls lacked good taste. There was a large unframed canvas painting on the wall across from the bed of a headless figure with muscular legs and arms but it was also clear that this figure had a female chest. Very untasteful and uncomfortable to look at, so we took it off the wall during our stay and placed it back up before we checked out. The thing that I may very well remember the most from our stay was that we were utterly freezing the whole time we were there. I noticed that others who stayed on the first floor were also complaining about the air conditioning being on too high. After expressing our discomfort, we were told that since it was an old house it was necessary to have the air on that high so that it the guests on the second floor would get some air. We were told to cover the vents -- since they did not close due to being old -- with magnetic covers which did not stick well and ended up falling off, or to use the bed pillows to cover the vents in the room. We had no choice but to cover the vents in the bathroom and room with bed pillows. Even though, we were still cold in our room and decided not to use the shower facilities because of this. Unfortunately, as delicious as the breakfast was and as well-kept as the gardens were, these facts alone would not entice me to stay at this inn again.

We've spent many anniversary weekends in Saugatuck, but this was our first at Wickwood. We will never stay anywhere else. We loved The Vineyard. It's nice and quiet and our featherbed gave us a wonderful night's sleep. The Inn is just steps away from the shops and restaurants of Saugatuck, but we were reticent to move from the back porch sitting areas. We spent much time reading and playing Backgamon for the three days we were at Wickwood, only interrupting ourselves when the delicious food was being served. We did manage to do some shopping and amazing beach walks though. Our Hostesses were most congenial from the moment we walked in the door and within the first few minutes we felt comfortable and relaxed, even though it was our first visit. They are extremely friendly without being intrusive and want to see to it that you are satisfied. We marveled at the Inn's decor..... very tasteful. We like to travel quite a bit and this has become our favorite. When in Saugatuck, be sure to stay at The Wickwood Inn. You'll be happy you did!

WHAT A GREAT INN!!!!An absolutely wonderful experience was had by my friends and I this past weekend at Wickwood! As the "planner" of this trip I matched up the gals to the rooms they would most identify with, though I must tell you there were oohs and aahs over each room The gals were drawing diagrams and taking decorating notes galore. Each had to see everyone else's room. They were just beautiful!! The innkeepers were delightful, professional and treated us as if we were the only guests, although the inn was full. The food was very special and very much appreciated by all of us. Taking home recipes delighted us all. And, lastly pleasing a group of eight women can sometimes be an overwhelming feat, but it was a hands down success!! Perhaps best of all was having Bill take our group photo and giving us spot on directions. He's a charmer.

This is our third visit to Wickwood and I can hardly contain myself. I need to share. This inn is an extraordinary experience for anyone no matter how well traveled you are or how much you spend on a vacation. We just checked-out and we feel completely pampered and relaxed after three wonderful days. The attention to detail and the exciting food (Sticky Buns, Chocolate chip cookies and Gazpacho, oh my goodness!!!) just made us feel very special. Our room, the Lodge, was spacious and calming. It was our haven after warm days spent at the beach, golfing and painting at Oxbow. We couldn't wait to get back to our room everyday. Wickwood is located in the middle of everything ....an added benefit. One of our favorite new adventures was the Petter Wine Shop which is great fun. I must add that the innkeepers at Wickwood are fabulous. Charm abounds. They second guessed our every wish. Several nights we never left the inn after the appetizers, so satiated were we. Wickwood always seems to be busy so we've already booked our October return. We travel a great deal and usually stay at small inns. Year after year this one remains our favorite.

My wife and I just returned from our fifth visit to The Wickwood and before we left we booked return visits for October and Christmas. We love the beautiful rooms, great homemade food, and the wonderful care we receive from the staff. We have returned home nice and relaxed and cant wait till we return in October.

We just had an incrdible experience at this most luxurious Inn and the most amazing part was that with all of the hype we had read the owners and staff had no pretention at all. We were welcomed with great warmth, our every request was fulfilled, every question answered and we felt very much at home. That said, the most memorable part of our visit to Wickwood was two-fold...being surrounded by fantastic artwork and experiencing taste treats that will remain a memory for a long time. Bill and Julee have much to be proud of in their Inn and the group of people they have to help them provide hospitality of the first order. We all (a group of four ladies) are very well traveled and quite exacting in our standards. We were in awe from the moment we were greeted at the door until the moment we left. WOW!!
