Recipe #4

This is a lovely and healthy dessert which can be whipped up in a matter of minutes. Not only that, but it won't effect your waistline, in the way that normal ice creams do.

You can get all the great taste, with some positive nutrition!

Prep Time - 1 min

Total Time - 3 mins

Serves 1

Ingredients:

2 Sliced & Frozen Bananas

Drizzle of Maple Syrup

2 Tbsp Natural Peanut Butter

1 Tbsp Cacao Powder

Pinch of Pink Himalayan Salt

Method:

1. Place all ingredients in a blender.

2. Blend and whizz a little longer, until you get a soft-serve ice cream consistency. Add a little water or plant-based milk to help ingredients blend better if needed.

Recipe #3

This 3 Bean Chilli & Fresh Pesto, is both comforting and filling. A simple recipe, with a big punch in nutrition, and taste.

Try it out, and let us know how you find it!

Prep Time - 15 mins

Total Time - 25 mins

Serves 4

................................................................

Ingredients:

Pesto:

¼ Cup Extra-Virgin Olive Oil

3 Tbsp Pine Nuts

2 Cloves Garlic

1 Cup Coriander

½ Tsp Black Pepper

½ Tsp Pink Himalayan Salt


3 Bean Chilli:

2 Tbsp Extra-Virgin Olive Oil

1 Red Onion

2 Carrots

2 Cups Filtered Water

400g Can Diced Tomatoes

1 Tsp Pink Himalayan Salt

½ Tsp Black Pepper

440g Adzuki Beans

440g Kidney Beans

440g Cannellini Beans

Method:

Pesto:

1. In a large bowl, combine the extra-virgin olive oil, pine nuts, garlic, coriander, black pepper, and pink Himalayan salt, and stir.


3 Bean Chilli:

1. Heat the extra-virgin olive oil in a large saucepan over medium-high heat. Add the onion and carrots and cook until tender, about 5 minutes.

2. Add the filtered water, stir in the tomatoes and their liquid, pink Himalayan salt, and black pepper, and bring to a boil.

3. Add the adzuki beans, kidney beans and cannellini beans, then cook until heated through, about 3 minutes.

4. Divide the chilli into individual bowls, and top with the fresh pesto.
