16 COMPLETELY SCRATCH ROPA VIEJA EMPANADAS

getting a quick chill in the freezer before frying.

Rather than fry as I fold, I like to let the empanadas chill in the freezer during the folding process and then while I bring the oil up to temp because this time in the freezer gives the dough (and the butter in it) a chance to set. The lowered temp also helps to ensure that the outside of the pastry doesn't brown too quickly while the inside cooks.

Time to heat up the oil while I make my Lemon Garlic Aioli for the roasted asparagus.

P.S. If anyone ever makes completely scratch empanadas for you, you can rest assured they either like you a lot or really have it in for you and plan to poison you with delicious fried things because they are truly a labor of love (or great contempt :P).

If any of my friends who are attending tomorrow night are reading this, I'm not that treacherous. :D
