Crystal Malt, roasted at 350°F for 5 minutes.  This stuff smells great.  I want a little cupful of freshly roasted malt sitting on my desk at all times.  Look at those kernels; magic dwells there.

A saison!  It's been a while since I last brewed.  So long that in the process of brewing this beer I discovered, like an archaeologist, beer and beer-like things I had brewed in the past and simply forgotten about.

For instance, I've still got a mead and a brett beer on tap.  Yes, I had forgotten what was in my kegerator.  I think they revoke your BJCP license for that sort of stuff, so let's just keep this between you and me.  Also, in the basement, a cyser from long ago which I'm pretty sure is terrible, and a cider from 2010 that I don't know if I've ever tasted.  Who knows what other wonders are yet to be discovered in kegs in my basement?

But, back to the saison.  A kit from Beer and Wine hobby.  The instructions on this kit were broken (if you're a brewer go in and read them to play spot-the-errors), so I had to go by the intent of the recipe rather than the letter.  Lots of spices in this one.  I had never tried "Paradise Grains" before, but they sure did smell good.  No big slip-ups this time, and I proved to myself that I can do a single extract brew in the time between when the kids go to bed and when I go to bed.

Also, I discovered the kitchen sink in the new house isn't compatible with my immersion chiller's hose adapter, so next time I'll be chilling in the bathroom.  Hmm, that didn't come out right.

Dear fans of my homebrewing posts,

I know you've been aching for more.  Me too.  Lately it's been like getting George R. R. Martin to write another Song of Ice and Fire book.

I don't want to get your hopes up too high, but I might be brewing again in the next couple of days.  I don't think it's too much of a spoiler to say it'll probably be beer.

But I've said too much.  Let's just allow the anticipation to simmer.

I saw this critter on the deck today.  I thought it might be an Asian Longhorned Beetle (http://www.uvm.edu/albeetle/), but it didn't seem "shiny", so maybe it's just a look-alike.

The 1 Hallertau boiled for 45 min, 1/2 Saaz for 15, and 1/2 Saaz for 0, all that plus the 15 minute post-boil "steep".

I usually prefer to go straight from boil to the immersion chiller, but I didn't know whether the spices needed the prolonged time at high temperatures so I kept to the instructions on that point.
