I took the abbreviated mixology (two four-hour sessions) course and found it nothing short of mindblowing. This is not some crappy, uninspired "bartending" course that teaches you how to memorize bad-tasting recipes and perform cute bottle swirling tricks. This course teaches you how to make drinks the elemental way, using knowledge of the various categories of mixed drinks. Andrew also espouses tons of knowledge on the history of various spirits, liqueurs and bitters. You will definitely learn how to make drinks according to pre-Prohibition standards. Among the things you'll learn in the course: What the term "cocktail" REALLY means A high-efficiency still and its effect on the flavor of rum The differences in gin categories How to pour bitters What kind of ice to use when shaking, stirring or serving a drink How much of a citrus fruit peel is to be cut The best spirits for mixing (Bacardi is certainly not one of Andrew's recommendations) In addition to the course, you receive the latest edition of his book, a loaded compendium of information on the best liquors, liqeurs, bitters, bar equipment and utensils, and basic recipe forms that give you a strong foundation to work on. I'm very sad that Andrew moved away from LA to Portland, as I was hoping to take his more in-depth course. However, he now offers courses tailored for travelers who are looking for a "boozy educational vacation" of sorts.
