Restaurant itself is small and intimate. Noise level is low. You don't have to raise your voice to converse with your dinner party. The Gauchos aren't as quick as the other churrascarias in town. They need to hone in on their serving and slicing skills. The salad bar is much of what you'd expect. Ribeye is over seasoned. Same goes for almost every cut they have but the garlic beef is the best I've had so far.
