NEW COOKING POST! Well it's so easy that there's no cooking involved, which is seems so nice when I need a quick lunch. I love tuna salad and avocados, so when you combine the two it makes for a healthy and simple dish that I'm kinda loving on a busy Summer weekday. Last month I made this deliciously healthy Top Heavy Chicken recipe that was inspired by a pork chop version my grandma made. I made a few changes, but the essence of it still reminds me so much of this family favorite, and it's comfort food to the core! I know my grandma was in the kitchen with me as I created it, and I have a feeling she was giving it a big thumbs up, because it was so good! This childhood fave gets a modern, spicy twist & it's insanely good! You get the spice from a pinch of cayenne, but don't worry it's not too spicy.
