Did you ever have Chinese scallion pancakes? A funny thing happened on the way to Shanghai. Since I had already taken some pretty big culinary departures on this recipe I decided to make a creamy dipping sauce. Ever tried to shape pancake batter in a ball? Yea, not so easy! Too liquid. Needs more substance. I added cheese – not at all Chinese, but pretty delicious.

Figure Friendly  - 
 
In my experience, diets are doomed to failure. A few weeks of deprivation make us cranky, irritable, and quite frankly unfit for social encounters. The handful of pounds lost are quickly replaced as soon as the dreaded diet is over. A regime of creative clean eating seemed more appropriate if we were going to maintain a healthier lifestyle. Sensible carbs make more sense. We are healthier, happier, and no one feels deprived.

Mixed with a handful of healthy pistachios and some lemon,  I made a fancy dinner-party-worthy Pistachio Mint Crusted Rack of Lamb that was seriously simple. And for good measure I served it with a Pistachio Garlic Mint Quinoa Pilaf.

Southerners love their vegetables and probably consume more than other regions of the country. They are particularly fond of super healthy dark leafy greens, garden fresh tomatoes, and beans of all kinds.

Balanced Budget  - 
 
I find that if my dishes are packed with flavor, I do not miss meat one little bit. This recipe is a nut free, gluten free, vegan version of panang curry which certainly fits the description of packed with flavor!
