My first stab at a recipe from the new "Indian Kitchen" cookbook from +Richa Hingle and it definitely won't be the last.  This book is a new favorite Indian cookbook.

The Indian vegetarian recipes that +Nupur Mehra shares always look great .... this one looks amazing
 
Its so hot, I hardly ever feel motivated to cook anything rich and elaborative. Determined to add more mint in my diet, prepared this “Paneer pudina” last night. Its an easy one, with loads of greens into it. Mint is a natural cooler with antibacterial properties, so get the most of it while its fresh in the season.

I could eat Indian savory pancakes every day, and these thin, soft pancakes with fresh fenugreek would be near the top of the list to make over and over again

A burly Italian stew/soup. Thick with vegetables; robust with beans. Tomatoes delicately scented with a wisp of rosemary and a few aromatic, crumbly bay leaves.

Hot, sour and salty Indian chat masala spice blend is so good it deserves to be used in more than just Indian cooking.  It works wonderfully in salad dressings, such as in this Mediterranean-style chickpea, olive and feta cheese salad.

+Lisa's Vegetarian Kitchen Thanks! Soy cashew yogurt is cultured exactly like dairy yogurt, and has the same consistency, fat balance and tart flavor, so it subs very well. The chances of my finding fresh fenugreek outside an Indian market 60 miles away are zero. Would cilantro or spinach be a good sub? And/or a tsp or two ground fenugreek seeds?
