Mooli Parathas

This is an Indian flat bread stuffed with spiced white radish accompanied with yogurt dip commonly known as raita.The sharp taste of the radish and aromatic coriander make this bread very flavoursome.Mostly served as breakfast Mooli Paratha can be eaten any time time of the day. 

Ingredients:

For the flat bread
2 cups wheat flour 
1 cup washed and chopped radish leaves
2 teaspoons oil
salt to taste
water to knead the dough

Method - Salt the radish leaves for 10 mins then squeeze out the excess water with your hands.Mix all the ingredients together to make a dough.

For the stuffing

Ingredients:

2 cups grated white radish
1 chopped onion
1 tablespoon ginger and chilli paste
1/2 cup chopped coriander
1 teaspoon turmeric powder
1 teaspoon carom seeds
salt to taste
oil for cooking

Method - Heat oil in a frying pan,add the carom seeds and onion.Cook the onions till golden brown then add the grated radish,ginger chilli paste,turmeric,salt and last coriander.Cook on high flame for a few minutes till everything is mixed.Let it cool.Pinch a small piece of the dough and roll out a 7 inch circular disc with the help of some flour.Fill it with a tablespoon of the stuffing spreading it on one side of the circle and wrap the other half over it to form a semi-circle.Seal the edges with your fingers.Cook both sides on a non-stick pan with some oil or butter turning every few seconds.Serve hot with yogurt dip.

Mee Goreng

A very common street food in Singapore ,Malaysia and Indonesia,you cannot go past the delicious smell of these fried noodles in asian hawker stalls.Once you have the recipe Mee Goreng is very quick easy to prepare.The ingredients can be easily found in any asian grocery store.So next time you can try this over the bought ones.

Ingredients:

Yellow noodles 1 kg
1 bunch washed and chopped spinach
1 potato cut in cubes and boiled 
1/2 cup green peas (defrosted)
1 cup washed bean sprouts
1 onion chopped
2 tablespoon chilli garlic sauce
2-4 tablespoon dark soy sauce
1 tablespoon sweet chilli sauce
1 tablespoon curry powder
oil for cooking

Method - Heat oil in a large wok or non-stick pan.Add the onions and fry for a few minutes.Add the potato and spinach cook for a minute.Add all the sauces,half of the soy sauce, curry powder and mix well.In the mean time untangle the noodles with your hands.Now add the noodles and cook stirring constantly scraping the bottom every minute.Add more sauce if needed according to taste.Last throw in the bean sprouts and cook for a few more minutes.Serve with sliced cucumber.

Bakwan

Bakwan is an Indonesian style vegetable fritter.It's one of my favourite starters from singapore.There are many varieties of bakwans but this recipe is the most common type of bakwans found in singapore.

Ingredients -

2 cups shredded cabbage 
1 cup grated carrots
1 cup thinly sliced onions
1 cup corn kernels
1/2 cup spring onions
plain flour as needed ( approx 1 cup)
2-3 tablespoons cornflour
oil for frying

For the paste -

1 onion
1 candlenut
2-3 properly washed coriander roots
salt and pepper to taste

Method - Make a paste with all the ingredients for the paste.Mix the vegetables and the paste together in a bowl.Add the cornflour .Add plain flour and few drops of water as needed spoon by spoon making sure the batter is not too runny.Heat oil in a deep frying pan.Drop a spoon of the batter in the hot oil to check if it falls apart.If it does just add more flour.Shape and fry in batches.Serve hot with thai chiili sauce.
