A healthy staple in our family: anything green soup. Braise one chopped onion until translucent. Add 2/3 to 1 lb steamed greens of you choice (spinach, swiss chard, zucchini). Do add only one species of veggies though. Sprinkle with 1 teaspoon starch and blend. Add enough water or stock to obtain a creamy consistency. Top with toasted bread rubbed with fresh garlic, a drizzle of good quality olive oil and a sprinkle of grated Parmesan or Pecorino.

This looks really good!  I have a bag of greens lurking in the back of the fridge that nobody in my family wants to eat because they think they might be too healthy for them....this might get them to eat them without realising it!  Thanks for the idea!!
 
if you do pasta instead of bread they will completely forget it's healty!
 
+Letizia Mattiacci this is my kind of soup.  i agree it is best with a single veg but sometimes i throw in some mustard greens into the spinach for zing
 
well, this one had a handful of celery tops besides the swiss chard just because I had them and did not want to throw them away :)
 
Looks delicious and reminds me in some ways of ribollita.
