Pretty close to the black bean soup recipe that I use (from the book "Pressure Perfect). I usually throw in 2-3 links of TJ's andouille sausage instead of chorizo, but that is optional. If I don't use the sausage, I generally add in some additional spices (cayenne, paprika, thyme, Mexican oregano). 

Recipe for Taco Casserole:

1 head cauliflower, riced
1-2 lbs ground turkey (depends on how meaty you want it)
1 can pinto beans
1 red bell pepper, chopped
1 or 2 zucchinis, finely chopped
Salsa to taste
Taco seasoning
Splash of broth

Directions:
1. Brown ground turkey, add taco seasoning either during browning or right after (with a little water and let it simmer a little while).
2. Combine the rest of the ingredients in a casserole dish – add salsa to your liking (I usually add probably 2tbsp or so). Add more taco seasoning into the mixture (to taste) as well as some broth so it doesn't dry out.
3. Cover and bake at 375 for 45 min to an hour.

Garnish with cilantro, chopped tomatoes, avocados – whatever you're in the mood for. :)

Recipe for artichoke heart caper chicken salad (the website where I got this has since shut down, so this is from memory – it's very versatile, though):

Chopped leftover chicken
Chopped artichoke hearts (canned in water, not oil)
Capers
Chopped red peppers
1tbsp mayo (optional)
Salt and pepper to taste

Optional add-ins:
onions
sesame seeds
slivered almonds
pretty much any veggie – be creative!

Throw it on top of a lettuce salad for a nice meal. I usually top with olive oil, pink salt, and fresh squeezed lemon.
