In late September, as the weather begins to cool, everyone thinks, “It’s time to grow cabbage to eat!” …but by that time, you should already have been growing your cabbage seedlings for almost two months!
Because of its growth pattern, July 15, when the climate is hot (and NO ONE is thinking about cabbage) is the time to plant cabbage seeds in a flat.

You then prick out the seedlings from one flat to another around July 31 to produce stronger seedling root system.

When the cabbage seedlings are 3 to 4 inches high, around August 21, it is time to transplant them into your growing bed, with the cotyledons just covered with the soil. This will ensure that the heavy, getting ready-to-harvest cabbages will be stable, and not uproot the plant prematurely.

There are three types cabbages, based on maturation time—60-day, 90-day and 120-day varieties. Two of my favorites are Greyhound and Primo. Greyhound is a 60-day cabbage that looks like a greyhound dog’s ear! Primo (pictured below, the one without the frog :) ) is also 60-day maturing, grows fast, and is available from (Ecology Action’s non-profit store, and a wonderful mail online source for seeds, gardening tools and publications).

Of course, I advise using the highly productive, resource-conserving, Biointensive method for growing these cabbages, because it makes it possible to use only 12% of the water normally required to grow a pound of vegetables. Imagine saving 88% on your water bill while growing abundant fruits and vegetables in these water-scarce times!

The average person in the U.S. eats about 9 pounds of Cabbage annually, an amount that can be grown in just 5 square feet of biologically-intensive beds at Intermediate-level GROW BIOINTENSIVE® yields.

Both of my recommended 60-day cabbage varieties are planted on 12-inch offset spacing. 90-day maturing Cabbages are placed on 15” centers, and 120-day varieties are planted on 18” centers.

60-day maturing cabbage planted as described here will be ready to harvest about October 21. Although it’s too late for this season, if you need mature cabbage before October 21, just move the sowing of seed (on 1-inch centers in the seedling flats) to an earlier date than July 15!
