Brewed 5.5 gallons of my almost famous Apple Pie Mead today. With a starting gravity of 1.140 this will be a STRONG mead. Unfermented it tasted like apple pie dipped in honey. Can't to try it in a few months. To make it even better, I was able to teach my youngest son (he's 18) how to make mead. Maybe one day all 3 of my kids will be brewers.

It's been a while since my last update... I know I really should get on here more often and post updates. If Google would hurry up and release an API that allowed other apps to post to Google+ then as I update my brew blog it could get posted here as well. Until that happens I'll TRY to do better at making updates.

First up, I made a bulk hops purchase. For those that haven't done this its a great way to save a LOT of money. You can read about it here. http://mysticmead.com/?p=413

I have also placed an order to buy some hops rhizomes. If I can grow enough hops to supply my brewing needs or at least a portion of it, then I'll be happy. I'll hopefully be posting updates as I go along to document the process. http://mysticmead.com/?p=402

I have submitted 4 beers to this years Peach State Brew Off. The beers submitted were Dwarven Warrior Oatmeal Stout, Das Kölsch, BMC Killer Cream Ale and Eleventy In Da Woods IPA. I did submit the IPA as an APA (American pale Ale) since it can very easily be considered a hoppy APA and probably score better. The judging and awards will take place at the Wrecking Bar Brewpub in Atlanta on March 24th.

I had posted about the loss of a great friend, that happened on Feb 13th.. He was the person that taught me to brew. In his honor one of his sons and I made 6 batches of mead in a single day. 32 gallons of fermenting honey! We even used some honey that his dad had stored from 1984! http://mysticmead.com/?p=429

lastly but from from least. After making the above mentioned 32 gallons of mead we quickly discovered that yeast is getting freaking expensive. $6.99 for a tube of White Labs Sweet Mead/Wine yeast!. That said I have started a small yeast farm I am currently growing (in starters) sweet mead yeast. As of right now I have enough yeast to equal 2 tubes from White Labs. I also have Wyeast Pacman (Rogue Brewery strain) on hand (about 1 quart of yeast, not yeast AND liquid, 1 quart of thick yeast cake) that should be enough to make 4 batches of beer plus replenish by making more starters. http://mysticmead.com/?p=440

What a busy weeks its been. This week I transferred my Dwarven Warrior oatmeal Stout to the keg, and brewed my Imperial Stout. The Imperial Stout should have had a starting gravity of 1.096... instead I got better efficiency than planned and ended up with 1.111. I transferred it onto the US-05 yeast cake left over from the Oatmeal Stout. Fermentation was fast and furious and stopped in 3 days. I let it sit for the rest of the week and today as I was preparing a starter of Whitelabs WLP099 Super High Gravity yeast to pitch and finish it off I took a gravity reading. To my surprise it was done. 11.1% abv!

Thursday I transferred my Kölsch to a secondary and added in gelatin to help it drop completely clear. I then brewed my Cream Ale and again had much better efficiency than expected. I was shooting for 5.5 gallons at 1.046 ended up with 5.75 gallons at 1.050. That was transferred onto the Whitelabs Kölsch yeast cake that was now available. It went NUTS and was blowing off for 2 solid days. Today fermentation has slowed tremendously going from blow off to a bubble every 15 seconds...It is already starting to drop clear and should be heading to a gelatin secondary by next weekend.

Tomorrow is the super bowl. I don't really care who's playing or who wins, I'll just be heading to a party with some great friends and sharing some Dwarven Warrior. Hope everyone that goes to a party has a blast but please, no drunk driving.
