Pat: Thanks for reading! I have started using coconut flour in many of my recipes, I substitute half the flour for coconut. The last banana bread was great...the coconut flour gives a nice flavor and is carb free. As far as chia seeds and flax seeds, I add those additional. I don't count them in with my flour portion. I think I add about a 1/4 cup to loaf. If using chia flour, then substitute a bit from your flour allottment. Hope this helps...I really just wing it. Never follow the recipe exactly.
