What kind of sweetener do you use? From all the natural sweetener alternatives, Stevia is by far our favourite. It is the most alkaline sweetener available and actually contains no sugars. There are many different kinds of stevia and A LOT are heavily processed. So much, that it no longer resembles a dried leaf anymore. Always choose the natural green dried-leaf stevia, over white powder forms - as the white powdered stevia is the most processed version available and usually contains fillers.

Here it is - our recipe for THE BEST organic, vegan, unprocessed raw, pumpkin soup:

You will need:

1 x half large organic butternut pumpkin
1 x organic brown onion
Cashew cream (recipe below)
Organic Pink Himalayan salt, to taste
Coconut oil for cooking (organic, unrefined, virgin or extra virgin)

Method - 

Cut the pumpkin into large pieces, leaving the skin on. Season and rub coconut oil on to each piece. Roast the pumpkin in the skin for approx 45 minutes on 180 degrees Celsius. Flip and roast for another 10 minutes. Allow to cool. Scoop pumpkin from shell/skin and add to a large pot. 

While the pumpkin is roasting, sauté the onion in the pot with coconut oil, until brown and caramelized. It's really important to sauté until golden brown, so the onion releases it's sweetness.

To the same pot, add cashew cream and salt. Blend together with hand blender, until smooth. Add more or less cream depending on desired consistency. Quickly heat before serving. Serve with fresh and steamed greens.

For the cashew cream/milk -

1C of organic, raw cashews
3-4 C filtered water

Soak the cashews in filtered water for at least 2 hours beforehand. To a blender, add cashews and 1C of filtered water. Blend until smooth and creamy. Add remaining water and blend until smooth.

Enjoy!

Right: Pumpkin soup (unprocessed raw, vegan, organic, gluten-free & grain-free. This pumpkin soup is simple and amazing. Unlike a lot of pumpkin soups, you loose the pumpkin taste with too many ingredients – this recipe only contains 4 ingredients and tastes amazing).
