Shio Koji, Japan’s Historical Ingredient Makes Waves Again

A fungus is becoming extremely popular in dishes around North America and Europe, however, it has had a history of over 200 years in Japan. Shio Koji, has been used to not only ferment foods but to also make alcoholic beverages, such as sake. Shio translates to salt or sea salt and Koji or Koji-Kin is a fungus/mold. The term Koji also loosly refers to “fermented foods”. This fungus has been in existence for well over 2000 years.
