Hi Seth (your comment doesn't give me the option to reply directly) Here in the UK, muscovado sugar is available as light, or dark, in most supermarkets. The most common brand seems to be Billingtons. Any soft brown sugar will do though (the darker the better, to compliment the balsamic vinegar), I just love the flavour of muscovado :-)
