Spring Beauties are SO beautiful. I admire you before getting my share of this heavenly salad. I picked this bunch in the woods near a rest area on the way back from Yellow Spring yesterday!

**Learning to forage ramps!** I knew wild chives widely available in woody lands around. But one of my colleagues just introduced me something more intriguing: **Wild Ramps!** We spotted a patch on the new trail we took for afternoon walk, but the problem is: when I dig one plant off, it doesn't have the red/purple stem under the leaves, and the smell is also slightly weaker than those I could find in Greenier at North Market. I'm glad to locate a Q&A on Answers.Yahoo:
*Q* Do all ramps (wild leeks) have red stems?
I'm from WV and eat ramps all the time in the spring. Every ramp I've ever seen has 2 leaves and red/purple stems. I recently moved to Lima, Ohio, and I went ramp hunting with a friend. We found a plant that looks exactly like a ramp, except it has an all white stem. The plant mainly has an onion smell, and doesn't seem to be as strong as the ramps I've had in the past.
Are there all white stem ramps? Or is this some sort of onion? I'm somewhat afraid to eat them.

I am a former chef from Canada, and have used them for over 20 years, they can have red, white or green stems, the younger ones are red, just wash them and cook as usual, as they age they develop a larger bulb like bottom, we use to pickle these as like wild garlic they tend to be acrid if eaten in the late season, if you want any more info, let me know through my profile, they are the same plant species in Ohio as they were in West Virginia.
