Fantastic Gluten Free and Dairy Free Pumpkin Pie Recipe:

2 eggs
1/2 cup coconut sugar
1 tsp. ground cinnamon
1/2 teaspoon salt
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1/8 teaspoon ground ginger
1 1/4 cups coconut milk
1 15 ounce can pumpkin puree or fresh
1/4 cup chopped pecans

Mix eggs, sugar, and spices; add milk and pumpkin and blend until smooth. Transfer to a 9 inch glass pie plate. Sprinkle with pecans.
Bake in 400 degree preheated oven for 15 minutes; reduce to 350 degrees and continue baking for 30 to 40 minutes more. Cool for 1 hour before slicing. You will never miss the crust!!

Summer is a great time to make probiotic veggies. Check out this recipe for Kale, Cabbage and Lemon Cultured Veggies:

The flavors of kale and cabbage blend together wonderfully in this lemon-infused blend of salad vegetables. Add this fermented dish to salads and soups, or place a spoonful or two on top of scrambled eggs.

Selection:
Choose cabbage and kale that are fresh and haven’t started to wilt.

Ingredients:
1 head of cabbage
4 cups kale
1 lemon
½ of a medium onion
4 cloves garlic
2 tablespoons sea salt
1 teaspoon sugar
filtered water

Starter Culture:
Culture isn’t necessary for this recipe.

Instructions:
1. Wash the veggies
2. Remove the tough outer leaves from the cabbage. Core the cabbage and cut it into thin slices.
3. Remove the thick stalks from the kale and break it up into smaller pieces.
4. Place the kale and the cabbage in a bowl. Add the sea salt to the bowl and stir it into the cabbage.
5. Peel the lemon. Remove as much of the pith as possible. Cut the lemon in half.
6. Peel and dice the onion
7. Peel and mince the garlic
8. Add the onion and the garlic to the bowl and stir it in.
9. Divide the contents of the bowl into two fermenting vessels.
10. Add half a lemon and a couple cloves of garlic to each container
11. Create brine by adding 2 tablespoons of sea salt to 4 cups of filtered water and stirring. Add the sugar and stir it in as well.
12. Fill the containers with brine. Leave room for the weight.
13. Add starter culture at this time. If you plan on using it. Get rid of any air bubbles that exist in the container.
14. Press the weight down into each vessel. Leave 1 to 2 inches of headspace at the top of the container.
15. Seal the container
16. Place the container in a dark place with a temperature of 72 degrees F

Fermenting time:  Start checking after 3 days

I love this fall carrot soup recipe! It's vegan, its' raw, and it's fabulous!

Spicy Carrot Soup

4 cups carrot juice
1 avocado
1/3 cup young Thai coconut pulp
2 tbs coconut sugar
pinch of red pepper
1 tsp. grated fresh ginger
1 clove garlic
1/4 tsp sea salt

Blend all until smooth. Add a swirl of coconut cream (young Thai coconut blended with a little water and a splash of lemon juice).

I have been going to Living Arts Wellness for several years, and I have had GREAT experiences each time. I currently see Kristi Buss. She is AMAZING! Her massage work is excellent, and her energy work is most effective! I recommend them highly!

After receiving massage therapy for over twenty years from a number of therapists with very different techniques and skills, I can tell you that the massage therapists at Living Arts Wellness are some of the best, not just in Colorado, but in the U.S. I am not exaggerating since I started massages in Chicago and have lived in Las Vegas, Wyoming, Montana, etc. They listen to you and what your needs are and are so well trained. Celeste and the other therapists continue their education because they love what they do and they want the clients to succeed with whatever physiological issues that they have. The environment is conducive to healing and wellness. You just need to go there and find out for yourself. I also think that the therapists work together and influence each other. I have worked with Danielle and I know how much she is influenced by Celeste. This is a great place.

I received a massage with Deb as a gift from my honey. I have been several places around Fort Collins and this was by far the Best Massage I have gotten to date.! She made me feel comfortable and really listened and focused on what I needed worked on. The room was clean and comfortable and, she was professional and had a wonderful manor. Deb is very good at what she does, and actually put me to sleep, that is a first! I left full of energy and pain free wich is pretty uncommon for me. I will be sure to visit again, and highly recommend her to anyone looking for a fantastic massage.!

My experience with Living Arts Wellness has been nothing but excellent. I suffer from chronic headaches as well as chronic shoulder and neck pain. My doctor had started talking about doing spinal surgery to relieve my pain because he didn't know what else to do for me, but I thought that would be awfully extreme. After some research I chose Living Arts Wellness as they do a lot of structural work, dealing with medical issues as opposed to a spa-type massage. The massage has absolutely been tailored to my needs. No "one size fits all" here. Celeste was incredibly flexible from the beginning. I've been to a lot of massage therapists over the last 20 years and Celeste blows them all out of the water. After my very first massage, my arm, which had become permanently numb in the previous few months, suddenly had feeling again. After several months of weekly massage, the numbness is gone completely. The pain in my shoulder is decreasing as my muscles are finally relaxing and being moved back into the proper positions. I could not be happier with the results. When Celeste went out-of-town, she made sure that I got in with another massage therapist (Amy) so that I didn't have to miss a treatment. And as much as I love Celeste, Amy was just as good. From my experience, I will assume that everyone there is of a similar quality. They all are involved in continuing education, constantly striving to give their clients what they need. My only with my experience regret is that I did not seek help from Celeste months ago.

A massage at Living Arts Wellness is always tailored to your specific needs. Gone are the days where I feel like my massage is the same routine every patient gets. Each appointment I tend to give slightly different instructions, and they always listen. As a cyclist, I can actively feel the benefits of my targeted treatments for comfort on the bike. Living Arts Wellness is my secret to performance.

My wife woke up with a terribly stiff neck yesterday. She is energetically sensitive. Living Arts Wellness they squeezed her in on short notice. Five stars for excellent responsive service, professional presentation, and near perfect instinct for customer need. She received an excellent massage from Deb.

I've been going to Living Arts Wellness for colonics and massage for many years, plus a class or two. Highly recommended! Celeste is great...very caring, skilled and knowledgeable. The prospect of colon hydrotherapy can be kind of scary before you've tried it...the fear of the unknown. But Celeste is very good at putting you at ease and making things comfortable. A very clean and safe process. After my first colonic I wondered why it took me so long to get myself there!
