RAW VEGAN PUMPKIN PIE with WHIPPED COCONUT CREAM

Crust:
1 cup walnuts
1 cup almonds
2 cups raisins
Pinch of salt (optional)

Pie filling:
1 sugar pumpkin, peeled, seeded and cubed (about 6-7 cups)
1/4 cup melted coconut oil
3-5 tablespoons coconut nectar or other preferred sweetener
1 teaspoon cinnamon
1/2 teaspoon each of nutmeg, ginger and cloves

To make the crust: pulse the nuts in a food processor until they're crumbs, add the raisins and salt and process until it begins to stick together. Press into a pie dish and put in the fridge.

To make the filling: blend all the ingredients until smooth, adding however much of the spices you like. If it's quite runny, let it thicken in a bowl in the fridge. Spread into your crust and refrigerate overnight until it's set. Slice and serve with whipped coconut cream.

WHIPPED COCONUT CREAM

1 refrigerated can of full-fat coconut milk
Touch of vanilla extract
2-3 teaspoons of maple syrup

Place the mixing bowl in the freezer 5 minutes before making the cream. When ready, remove the can and open it upside down. Pour out the liquid milk on top (save for a smoothie or another recipe). Scoop our hardened cream at the bottom, whip with mixer. Add maple syrup and vanilla.

Snow shoveling can lead to body aches and pains. Here are some tips to help alleviate some of these issues.

1. Try warming up your muscles a bit before going out to shovel.

2. Stretch before and after.

3. Lift heavy snow using your knees... not your shoulders and back.

4. Take breaks if there's a lot of shoveling to be done... this will help to avoid strain.

5. Take a hot shower or bath or apply moist heat to those sore areas.

And, if this doesn't alleviate your soreness and/or pain, consult a certified massage therapist at Living Arts Wellness

October 22nd, 6:00 pm - 8:00 pm

The Fall Autumnal Equinox was September 22, taking us from the busy summer into a slower paced time of year. This is a time for introspection, for taking a look at what we have accomplished and planting the seeds for future endeavors, to move from outer journeys to inner journeys, to connect to our inner wisdom and to the deepest aspect of our being. In other words, an optimal time to learn to meditate. In this two hour class, you will learn about different types of meditation, how to fit meditation into your daily routine, the benefits of meditation, and experience guided meditations. The cost is $50 for a two hour class with a FREE followup class to answer all your questions and talk about what you are experiencing both during your meditations and in your daily lives. Plus ongoing support as you begin this amazing inward journey.

Marcia Keilen is a certified meditation teacher through the Chopra Center for Well Being in Carlsbad, CA.

I had my first colon hydro therapy session and massage with Celeste, and she was amazing! I had no idea what to expect and I was a little nervouse. She made me feel so comfortable and at ease. After my session was complete I felt so good. I have not felt this healthy and relaxed in a really long time. I will definently be a regular at Living Arts Wellness.

LivingArtsWellness is a place where intuition and sensory support can be achieved. I simply adore Celeste. Her nurturing style is mother like, providing a feeling of great love and trust. She dives into the tissues of my body, rising to the surface having aided in inflammation reduction and removal of emotional tension. I feel she cares about my optimal health. I Recommend her to anyone feeling emotional or physical discomfort.

This was my first colon hydrotherapy session and Celeste made it very easy with how informative, helpful and professional she was. I would highly recommend her to anyone needing a cleansing program and plan on seeing her again the next time I am in Fort Collins.

I have had a lower back pain for years after a car accident and I frequently have massages to help with the situation. I had the opportunity to have a massage from Celeste at Living Arts Wellness when visiting Fort Collins and I have had completely pain free days ever since for the first time in a very, very long time! Her experience and clear knowledge of deep tissue work was of great benefit and I have not had such relief after just a single session ever before. Thank you so much!
