I tried out that noodle recipe I posted yesterday, adapting it based on the ingredients I had in my kitchen already. Yummy!! You can find the original recipe link below.

Or you can follow my slightly healthier, gluten free adaptation. It's super simple and delicious!!

1/2 package of brown rice Pad Thai Noodles (I used Tinkyada brand)
4 green onions, greens and white chopped
1 teaspoon toasted sesame oil
2 tablespoons evoo
3 tablespoons low sodium soy sauce

Boil noodles until al dente, rinse, drain. Heat oils over medium heat in large pan then add noodles and cook for four minutes, stirring often with chopsticks. Add green onions and soy sauce and cook for four more minutes. If it started to get too dry and sticky, I added a teeny bit more oil and soy sauce. Serve immediately.
