Completely agree. In fact, the very few belongings I brought with me to Paris when I moved here was my 3 knives: Chef's, Paring, and Bread. However, I have not been able to find a large bread cutting board (you know, the slotted ones with a crumb catcher underneath). Do you know where in Paris I may find one?
 
Totally agree with this.  My mom always had a ton of crummy knives.  One good knife is worth a 100 mediocre ones. Also should feel good in the hand (Form with Function).
