Here's a recipe I picked up in Alta Badia - using burnt wheat, or grano arso, to make tagliatelle. Originally from Puglia, it is undergoing a comeback, and makes a wonderfully nutty pasta!

I had a wonderful lunch with California producers Corte Riva last month - it was the highlight of my trip to Napa! A warm welcoming family, with an absolutely amazing portfolio of wines. Felt like I was back in Italy! Check them out!

Introduction
Kathy Bechtel is Owner and Culinary Director of Italiaoutdoors, a small guide service that creates unique active (bike, ski, hike) tours in Northern Italy. Kathy is a culinary school graduate, has WSET wine certification, teaches cooking classes in Italian cuisine, and hosts a TV cooking show on WSKI-TV. She is also an avid biker, hiker, and PSIA certified ski instructor on staff at Sugarloaf, ME.
