Meet Emily. She's really sweet. No, seriously.

Emily Wilcher went from cocktailing to tending bar on New Year's Eve 2001 -- when a bartender didn't show up for his shift. Since then, she's made drinks at a dance club, music venue, dive bar, goth club, and a pub where she was promoted to corporate trainer. She moved to Brooklyn, and her craft experience was born. Working in Williamsburg, Greenpoint, and Bushwick, she learned the art of the classic cocktail.

After years in NY, she and her partner Andy decided to leave the Big City and move to the South -- Nashville! Emily landed a gig at the world famous No. 308 where she learned how to understand her own palate and create original cocktails, and discovered her Southern charm along the way.

Emily has been in Seattle since August, and Witness is her first gig in town. In her free time, she enjoys spending time with her husband, Andy, cooking and baking, going to the gym, and vintage shopping.

Meet Sarah.

Seen, unseen, complicated, focused. Sarah George's determination, grit, and unwavering moral compass are what set her apart from those nipping at her heels. The windswept plains of Arizona still whisper of George's presence, a warrior priestess with the power of conviction wrought from centuries of esoteric bloodlines. Like paint on a canvas, Sarah has left her mark on Witness. Step up to the bar, an appetizer appears, Sarah George at your service. Be it drink, food, philosophy, or sport, it will be straight up no chaser. Relaxed? Comfortable? Sarah did that. Full? Satisfied? Sarah did it. Didn’t realize you were up against a woman who apprenticed with Sufi Mystics and Kenyan Witch Doctors did you? Your cloak and map are no match for what G is packing. Time and Space have warped her, the ability to quantum leap -- paid for at a great price. Witness found Sarah beleaguered, wild-eyed, drifting on the cosmic tides of the fourth dimension, and has gloried in this phenomenon ever since. Rumored to travel between galaxies on missions both niche and necessary. Latest credible reports mention her presence near the Crab Nebula, searching for the perfect ingredient for her edible alchemy repertoire. We await her next transmission with bated breath, for the price on her head is high.

Over thirty years ago, Rod Bradshaw commenced his restaurant career washing dishes at a popular local chocolate/espresso café on the 400 block of Broadway Avenue East. After many hard years working numerous café jobs (busser, bartender, waiter) all around the city, most of which had European-sounding names like Raison d'Être, Cuoco, and Dilettante, and Cafés Sophie and Septième, Rod is thrilled to be back dishing up good service and deadly charm at a lovely joint on the 400 block of Broadway Avenue East that feels like home.

The simplicity and genius of Witness suit his soul, and the quality and integrity therein nurture his spirit. It may not seem as if Rod has traveled far from his roots, but the journey has been monumental, and continues ...
