Tomorrow is the Summer Solstice, the longest day of the year. I'm celebrating with this Summer Solstice Collins; a riff on a Tom Collins but with vodka, blood orange liqueur, lemon juice, simple syrup and club soda. So cool and refreshing...CHEERS!

I love making cocktails in the summer that use fresh fruit and yes, veggies. This blackberry, lemon and gin concoction is called The Bramble and it's absolutely terrific.

I asked them to send me to Vegas if I were going to participate! Never had much appeal before but this time around it would have been nice. Still surreal she lives there!
