Hi all, just came across this article, thought I'd share it with you. It's well worth a read! For myself I have always believed in the importance of setting goals as well as setting out the steps to make sure they are achieved. This article shares with you sure fire ways of deciding what goals should be important for you and tips for making sure you have the best chance to achieve them. Great advice for fitness goals or just life goals. Enjoy!

Twice Baked Breakfast Sweet Potatoes

Ingredients

2 medium sweet potatoes...
4 slices bacon
1 medium sweet onion, diced
4 garlic cloves, minced
sea salt and black pepper
4 small eggs
 
Directions

Heat oven to 400 degrees. Poke sweet potatoes with a knife a couple times then place directly onto oven rack. Cook for 40-45 minutes until soft. Remove and let cool.


In a large skillet, fry bacon until crispy. Remove and toss in onion and garlic in leftover bacon grease. Cook for about 5-7 minutes until onion is translucent.
After bacon cools, cut into small pieces.


Once sweet potatoes are cool, cut lengthwise then scoop out the middle of the sweet potato. I used a knife to cut about 1/4 inch away from the skin all the way around then I cut the middle into three pieces. This makes it easier to remove the middle without breaking the skin.


Mash sweet potato into skillet. If it is a little undercook, cover and cook for 10 more minutes.
Stir in salt, pepper and half the bacon bits. Place sweet potatoes on a parchment lined baking sheet.


Scoop mash into potato shells then create a large divot for the egg. You will want to make sure the divot is big enough to fit the egg.
Break one egg into each divot then sprinkle with remaining bacon bits. Cook for 15 minutes or until yoke is set.

Avocado Pesto

INGREDIENTS:
5 ripe avocados, pitted and peeled
1/2 tbsp minced garlic
1/2 tbsp chilli flakes
1 bunch basil stems removed
2 oz unsalted pine nuts
Sea salt, to taste
Fresh ground black pepper, to taste

INSTRUCTIONS:
In a food processor, purée all ingredients. Add cold water as needed to adjust to your preferred texture and thickness. (serves 4)

This is one of the easiest recipes you can make. A perfect snack or breakfast on the go. 

Ingredients:
6-8 Eggs 
1 carrot (grated)
1 zucchini (grated)
A handful of spinach finely;y chopped
1/4 capsicum chopped 
3-4 medium sized mushrooms finely chopped
1/2 diced onion
2-3 rashers of bacon or any cooked meat of your choice (optional)
salt and pepper to taste

Method:
Preheat over to 160 degrees on fan bake.

Cut up all ingredients and mix through egg mixture, stir until all ingredients are covered in egg. Add salt, pepper and optional herbs to taste.

Lightly grease a muffin tray / silicon moulds and spread mixture evenly across 12 muffin cups.

Place in the oven for 20-25 minutes or until egg mixture has set
