+Barry Wilkinson I don't think the evidence supports that. Hunter Gatherers nearly always go for the fattier parts of the animal. Look at the Native Americans and how they ate buffalo. They fed the lean meat to their dogs. I agree you should avoid grain fed cattle because the fat it produces is not optimal. However to say modern animals have been bred for extra fat is not the case. Modern breeds are much leaner than they were 50 years ago because of the current fat phobia.
