Filhos de Aljezur.
This traditional Portuguese sweet is for Xmas time. A lovely couple of women gave me the recipe last August in Aljezur (Costa Vicentina- Portugal) while they were cooking them for the village fair. You can top them with icing sugar and cinnamon, but they are delicious just like this. And they have a secret ingredient: the strawberry tree liquour.

Pisto Manchego.
This is a very traditional dish from Castilla la Mancha. It only contains olive oil, green peppers and tomato. It´s a simple recipe but plenty of flavour based on the season farm ingredients.

Tagarninas esparragás.

This dish is made of Spanish wild thistles, cooked with garlic, ñoras (sweet peper), cumin, paprika and olive oil. Once the tagarninas are cooked we usually add an egg and warm the dish again until the egg is done.

This is a dish from late winter to early spring.
