I do my caulicheese slightly differently, though this does look yummy!

I cook the cauliflower for about 5 minutes, and then drain. Meanwhile I make a fairly standard white sauce. However, when making the roux, I add in some finely chopped chilli. I usually use scotch bonnets, but you can use whatever you like. This gives the dish a whole new level. Once the roux is made, and the milk added and stirred in, I mix in the grated cheese, stir while it's melting, and then pour over the cauliflower in a baking dish. Bung in the oven for about 40-45 minutes, and I guarantee you'll never make it the same way again!

Was in Tesco this morning, when the cashier asked the foreign couple in front of me if they needed help packing their bags.
