Just before the end of British Pie Week yesterday, I made 'hortopita' - a Greek-inspired wild spring greens pie. 'Horta' refers to at least 80 different edible wild greens growing in Greece. My pie had layers of crispy filo pastry stuffed with feta cheese, cooked rice, grana padano, beaten egg, mint, lemon zest and fresh local wild greens: three-cornered leek, mallow, wild garlic, nettle tips, sea beet, alexanders, chickweed and cuckoo flower. Served with a nice crisp sauv. blanc.

I like the idea of this fennel and three-cornered leek salad. I've seen it flowering in Hastings already.
The wild garlic is just starting to flower in our hedges, so I made this Fennel & Wild Garlic Salad to let it shine! Dang it was good!

Anyone else found any yet this year?
