MEATY LASAGNA

One of Glee’s favourite songs is:

The focus of this meal was colours. The main course of lasagna carried out the bold red which caught Glee’s attention. I paired it with the Greek Salad to incorporate the rest of the rainbow colours. The results were just amazing; not only Glee got to review her colours, but loved eating the meal too. She was super happy to have her auntie Gwei Mui as company and it was great that the adults enjoyed the meal too!

WHAT INSPIRED ME TO BECOME A MOMPRENEUR?

After a 5 year corporate assignment in Asia got cut short, I came back to Canada with a new phase of my life. My family now included a baby girl, Glee. It was really difficult to focus on job hunting while caring for Glee. It was quite a transition and I became lost. I could return to the financial industry, however thinking back, I remembered how demanding it could be. I used to do 60-80 hours per week as a sales manager and my evenings and weekends were reserved for meetings. Even if I could get my foot back in the door, I wasn't sure if that same lifestyle would allow me to see Glee very much. I refused to choose between career and family. That's when I had to take my life into my own hands. I wanted flexibility to spend time with my family, excitement to keep me going each day, and diversity to continually challenge my creative side. So I followed my heart and started Gleeflgourmets.com. The concept is to help busy families with their daily dinner planning. I do their meal plans so they will never have to ask the question, "What's for dinner?" ever again!

Gleeful Gourmets Daily Dinner Meal Plan
Over the last weekend, I attended a wedding dinner party and one of the conversationa was about a salad spinner. The debate was whether it was a useful tool?!  I know most Asians don’t find it useful because they simply don’t eat a lot of fresh salad.

I remembered having a conversation with my uncle when I lived in Cambodia a few years back.  I made him a steak dinner with a fresh salad.  He wasn’t used to eating uncooked vegetables because of his mental block from the past.  He told me that back then it was hard to find safe drinking water, so they had to cook everything before putting it in their mouth including water.  In the modern days, in most parts of the world drinking water is so accessible that we sometimes take it for granted.  We need to constantly remind ourselves to look around, appreciate and be grateful of all the things we have, especially when we are having a bad day!

This explained why I only remembered having cooked spinach as a child.  In this meal, I incorporated both cooked and fresh spinach because spinach has a lot of health benefits as listed below.  The fresh spinach was mixed into the arugula and you definitely need to use the salad spinner to spin the spinach after washing it.  Otherwise water will cling to the leaves and your dressing will be watery.  Spin your salad and you will notice the world of difference!

Never Say Never!
When I first immigrate to Canada at age 9, I wasn’t aware that oranges were in orange.  That was because in Asia all oranges were green.  The only orange part were the flesh.   For the longest time, I coloured my oranges green at school.  My teachers thought it was because of the language barrier so they tried to explain to me that the colour of the oranges were orange.  I didn’t believe them because I never saw one ever in my life.  So I told them “No! Never!”  Not until I went grocery shopping with my parents the next day and saw the actual oranges in the colour orange.  I was shocked and I had to taste it right there and then to make sure it was an orange.  Of course it was, so from then on, I learned that I would never say never again because really you NEVER know!  It is funny how things can be so different around the world!

Huan and Glee love oranges; they are juicy and sweet.  They are so good for you because they are packed with antioxidant and vitamins.  We almost always have oranges stocked in our fridge.  Last week, there were a sale on oranges in the supermarket so we bought more than usual.  So I decided to incorporate oranges into one of our meals and take the opportunity to tell Glee about the green oranges.

I found this pork recipe surprisingly easy and quick to make.  I paired it with brown rice and the roasted butternut squash.  The flavour is just amazing!

Easiest chicken pot pie every!
Huan made a request for a creamy chicken pot pie because he was craving it for some reason.  After researching for a recipe on the internet and cookbooks, I kind of just took the common elements of all and did my own version.  This was my first attempt to make one, so I really didn’t know what to expect.  To my surprise, it was a lot easier than I thought. Especially with the help of ready-to-bake pie crusts! You can literally make this in 10-15 minutes and let it bake in the oven.

When it came out of the oven, Glee was really excited because she thought we were having apple pie for dinner. She took one bite and asked, “What happened?” I thought to myself that she wasn’t going to eat it. What was I going to do for her dinner? I replied and made an attempt to get her to try it anyway. “This is just a different kind of pie! It is chicken pie!”   Her eyes lid up and said, “Chicken?”  She loves chicken, so she ate it all up, even her side salad! Huan loved the pie so much he ate half of it all by himself.
