Kachumber Salad: Indian Marinated Tomato and Herb Salad with Lamb Kebabs

Some refer to Kachumber - a salad of tomatoes, onion, and cucumber - as the Pico de Gallo of Indian food, and indeed, it is often simply served as an accompaniment to dishes. But this delicious marinated salad deserves center stage, especially when using summer's ripest tomatoes and topped with a spicy lamb kebab. Multi-colored cherry tomatoes make the most striking presentation in this dish and generally pack in a sweeter punch than larger varieties in early summer. Their sweetness, along with cooling cucumbers, pair beautifully with aromatic spices such as cumin, chile, and masala. For a vegetarian version season tofu or chickpeas with the same lamb seasonings, then grill or roast until crispy. How to Make Gluten-Free Pork Pot Stickers from Scratch

The one cuisine I deeply miss since getting diagnosed with Celiac disease is Chinese food. No more dim sum, no more chow fun, no more delicious meat-filled dumplings. Gone are the days of eating my way along the Dumpling Trail in Richmond, B.C.

Though there are many gluten-free noodle options on the market, I have yet to find store-bought gluten-free wrappers to make pot stickers or wontons. Then I found Laura B. Russell's The Gluten-Free Asian Kitchen: Recipes for Noodles, Dumplings, Sauces, and More, a must-have cookbook for gluten-free lovers of Asian food. For those new to a gluten-free way of eating you'll find the section on identifying sources of gluten in common Asian ingredients (some ingredients are often sneaky like imitation crab (aka surimi), which contains wheat as a binder) and stocking a gluten-free Asian pantry indispensable. Her beautiful cookbook features an array of Asian recipes - Chinese, Japanese, Vietnamese, Thai, Korean - with chapters covering Sauces and Stocks, Skewers and Snacks, Dumplings and Savory Pancakes, Noodles and Rice, Vegetables and Tofu, as well as Seafood, Poultry, Meat, and Sips and Sweets.

10 Mother's Day Brunch Recipes She'll Love!

Celiac Awareness Month: Let’s Stop Gluten-Free Shaming

One of the hardest things about having Celiac disease is the negative connotation associated with a gluten-free diet. For those of us who have Celiac disease, it’s not just a way of life; avoiding gluten is a medical necessity.

Just as avoiding peanuts is a medical necessity for those with peanut allergies.

Just as needing insulin is a medical necessity for those with diabetes.

None of us ever asked for this disease, and we do what we can to heal and help manage our health, which is no small feat. As a Celiac, avoiding gluten out in the real world without the risk of cross-contamination is exceptionally challenging. I would not wish this disease on anyone. Ever. (Oh, how I would love a plate of that Spaghetti Bolognese above!)

So why are we often shamed by our need to be gluten-free?

There are two groups who I think feed the negativity surrounding a gluten-free diet. First are those who treat it as a fad diet, believing it to be an easy way to lose excess pounds by avoiding gluten; unfortunately, if you asked many of these people what gluten is they could not tell you. These people have been the butt of jokes from comedians to those in the food industry, and sadly, they are the ones who have left a stain on gluten-free eating as a medical necessity. My advice: If you can eat gluten without any ill effects, eat it. There are many essential nutrients and health benefits found in gluten-containing whole grains! Just please don't pester your server about your need for a gluten-free meal (or tell them you have a wheat allergy), then order a hunky piece of cake for dessert.

The second group of offenders is doctors. Yes, doctors. Many conventional medical professionals look down their noses at gluten-related diseases. My mother’s primary care physician referred to Celiac disease as the “disease du jour.” (How can a disease be “trendy”?!) My daughter’s pediatrician groaned and said, “Don’t tell me a naturopath diagnosed you?” when I told him I'd tested positive and asked him to test my daughter as well. When I declined a dessert at a recent dinner event saying that I had Celiac disease the young doctor who offered it to me asked, “Oh, did a doctor diagnose you?” I just smiled and said, “Yes, an endoscopy confirmed it.” Would a doctor ever dare ask someone with diabetes if they were diagnosed by a doctor? Would they dare asking anyone with any disease for that matter if a doctor diagnosed them? No. Because what she really was asking was if a “real” doctor diagnosed me. For a moment, just as my pediatrician had done, she made me feel ashamed. Why?, I thought, should I feel ashamed for getting properly diagnosed? I get it. Conventional medical doctors think naturopathic doctors are quacks. But, in fact, many NDs are diagnosing Celiac more than MDs. For the record, I go to both medical doctors and a naturopathic doctor because I believe both offer significant medical value, but my ND approaches my health and healing in a much more integrative way.

The good news in all this is that, in time, fad diets burn out. My hope is that those who follow a gluten-free diet for no real health reason will tire and move on to the next fad diet. Maybe then the millions of us who medically cannot tolerate gluten will finally get the respect we deserve.

Though they're available year-round radishes are at their delicious peak in spring. These juicy, pungent, and sometimes sweet little root vegetables come in a rainbow of colors - red, white, purple, black - and are wonderful eaten raw, roasted, pickled, simmered. Even the stems and leaves are edible. Radishes, in all their colorful glory, offer a bevy of health benefits as well. They're a powerful detoxifier (hey, we can spring clean our bodies too!), are good for the stomach, liver, skin, cardiovascular system, and more. They're also high in fiber, making it a great diet food (swimsuit season is around the corner!).

Toss radishes in a bit of olive oil and a sprinkle of good salt and roast them, along with their stems and leaves, for a simple and tasty side dish. For a quick and delicious snack or appetizer, slice up a baguette, smear each piece with a bit of anchovy butter and top with thinly sliced radishes (watermelon radishes make the prettiest presentation!), and some finely chopped chives if you like. Layer rings of rice (doughnut-style) with colorful fruits and vegetables like mango, radishes, purple cabbage, carrots, avocado, and green onion for a fun vegetarian take on sushi. Toss radishes, shrimp, and peas with a creamy herb yogurt dressing, or fill a bowl full of tender mâche and sweet Romaine lettuces then top with a garden full of springtime vegetables like asparagus, peas, and radishes. Delicious Menu Ideas for Easter Brunch and Dinner!

Some years we roast lamb, other years it's ham or pork, and occasionally a decadently unctuous prime rib roast. That's what I love about Easter; there are no hard-fast rules like a turkey on Thanksgiving. Of course, traditions vary from family to family, and in my family, we mix it up. This year we're taking six quiches - all different - over to our neighbor's for an egg-hunt and feast. Quiche is the perfect brunch item and so easy when you buy frozen pie shells. Use the MASTER QUICHE LORRAINE RECIPE FROM JULIA CHILD as your base and omit the bacon to make other variations. Mushroom and gruyere; Cheddar and asparagus are beautiful springtime combinations.

For your late afternoon or evening meal, you could grill up a CEDAR PLANKED HARISSA SMOKED SALMON and serve it with tender FENNEL POTATOES, and A SPRING GREEN SALAD WITH ASPARAGUS AND PEAS.

If ham is your plan, try it with an ORANGE ROSEMARY MARMALADE GLAZE along with some good ole TWICE BAKED POTATOES for cheesy goodness or GOAT CHEESE MASHED POTATOES WITH GARLIC AND SAGE. A refreshing RADISH, CUCUMBER, and CHIVE SALAD will help balance the heaviness of the rest of the meal.

Classic Italian porchetta is worth the effort, but this simplified SMOKED PORCHETTA LOIN incorporates the same beautiful flavors of fresh herbs, fennel, and lemon all easily wrapped up in an inexpensive pork loin. You could even do this same preparation with a boneless, butterflied leg of lamb. Either one would be perfect with CHEESY PARMESAN POLENTA and a LETTUCE, APPLE, AND CUCUMBER SALAD WITH FENNEL AND WALNUTS.

I stumbled upon some ASPARAGUS FRIES (pop them in your Air Fryer, if you have one!) and thought they'd be wonderful with whichever menu you choose (or, frankly, any time). And this festive EASTER NEST SWEET CAKE WITH SOUR CREAM-ROYAL ICING AND PISTACHIOS is a must for dessert.
