Homemade Apple Sauce

Super easy & quick recipe here:

So, so much better than anything out of a jar or can, make it a couple of days earlier and stick it in the fridge. On the day, either serve it cold with your holiday meal, or warm it up. And eat #realfood!

All you do is cook some apple down with a little added liquid which can be (hard) cider, water or apple juice. Sugar is added and some spice for some aroma, done in 15-20 minutes!

Tidbit: Apparently, there are over 7 500 varieties of apples in existence, some are sweet, some are tart, from Braeburn to Golden Delicious to big old Bramley. How many can you name? I don’t think I managed quite a dozen off the top of my head!

And you can use it in so many ways! Here are just a few examples:

> as a meat accompaniment
> spooned over vanilla ice cream
> mixed into pancake batter for apple pancakes
> as a topping for said or other pancakes
> eat it straight up, the way I love to do!
> mix a little into the next Indian curry you make – zing!

So this Thanksgiving and Christmas, please, please make your own apple sauce or apple butter! You'll find the recipe link at the top of this post.

Homemade Oxtail Stew

You saw it in the making yesterday, here's the finished article! So much better than anything out of a can and way easier than you think! As soon as the weather turns cold, this is a must on our dining table.

There really is something so satisfying about this dark, rich, almost gelatinous stew that has you thinking of grey, cold and wet days spent in front of a roaring fire! And to me, there is no better way to enjoy it then with some fresh crusty bread, to soak up all that delicious flavour! Or mashed potato!

And it's even better the next day, so make double the amount!

Easy Pickled Thai Demon Chillies

Time to get all those chillies dried, frozen or pickled, as the temperatures start to dip in the nights.

These Thai Demon chillies are so tiny that they make for very easy pickling; no need to cut or prick. Here, I just cooked them for a minute with a little sugar and salt and a whole lot of rice wine vinegar. Then the whole lot got transferred into a sterile jar and when cool, placed in the fridge. This is a super quick method for stuff you don't expect to still be eating 6 months down the road.

How do I eat these chillies? They are perfect as a side to rice and noodles. In Thailand, no street stall meal is complete without chillies on the side, whatever the dish. But as you can just see in the picture, I also love to spike an ordinary salad with the chillies and some of the pickling juice, especially when I don't fancy added fat to my lunch in the form of salad dressing.

Bournemouth Gardens Christmas Ice Rink

No. 3, Sahara, is 12 today, and as requested, we started her birthday with ice skating, before going off for lunch at the kids' favourite Chinese restaurant.
First day of opening, and it being a school day, the rink was quiet, which suited us just fine. My older 2, who don't (didn't?) skate, even got free lessons from one of the nice young ladies minding the rink.

Barberries or Zereshk

Barberries, Berberis or Zereshk in Persian, are a delightful, useful, and an indispensable ingredient in the Persian kitchen. They impart not only a gorgeous burst of colour but also a marked tart and tangy flavour.

Naturally, I use it a lot in my kitchen, many of our Persian recipes call for barberries, but I also use them in North African and European recipes, as they are a great substitute for cranberries, and vice versa.

How do you use Zereshk? It’s a simple matter of soaking them in tepid water for about 10 minutes, squeeze dry and use whole or chopped up.

They are half the size of raisins, in case you are wondering.
