Researchers have developed a "model mouth" that delivers quick and accurate feedback on flavors and textures of food in conditions mimicking those inside a human mouth. "We have designed a comprehensive and advanced model mouth to act as an in vitro platform for understanding complex oral systems, including the tongue and its role in flavor perception," I wonder if it will develop a craving for chocolate.
A newly developed ‘model mouth’ could have industrial applications as a product development and evaluation tool for food companies, say researchers.

Innova Market Insights researcher Lu Anne Williams has identified 10 trends in the chocolate industry, including products made with natural and sustainable ingredients and with clear information about ingredients' origin. The aging population and demand for protein are creating nutrition niches that can be filled with chocolate, she said.
Ethically responsible companies catering to health-conscious consumers with clean-label premium products are likeliest to win, according to a market analyst.
