HELL YEAH! Justice is served...only took three years. Next in line, lets legalize growlers and crowlers for licensed breweries! Take it a step further, lets do 6 packs and other sizes for off-premises sales like many other states enjoy. Texas is taking baby steps towards getting rid of archaic and unconstitutional beer laws the big boys would love to keep in place.

Opened the +Galveston Bay Beer Company taproom today and what a turnout! Had every chair and table in the house occupied. Thanks to all our fans who turned out and made for such a successful launch. Cheers!

Here's a nice little article showing how craft beer is exploding in popularity across Texas as new breweries open up every month. Got a mention of +Galveston Bay Beer Company in here too! Looking forward to an even greater selection of local craft beers in the coming months.

Mashing In A Belgian Quad

I decided it was time to brew another big belgian beer. I think I have just about reached the limits of this mash tun! The last quad I brewed turned out a bit sweeter than I would have liked, still within style at a final gravity of 1.024 but I want to go just a tad bit drier so this time I am mashing lower with a beta sacch rest at 142°F for 20 minutes and alpha sacch rest at 152°F for an hour. This should bring my FG to about 1.018 if all goes as planned. I love the smell of wort in the morning.

Fermenting
Cherrywood Smoked Kolsch
Rye Saison
Pilsner

On Tap
Hammerhead Scotch Ale
Sunny Day IPA
Tart Cherry Brown Ale
Laffite's Wheat
Midnight Brew Coffee Stout
Winter Warmer

Going to make a trip out to the farmers market next week to see what local ingredients I can use for a new recipe. Probably going to pick up some honey to make a braggot. So many ideas so little time.

Building A Taproom

I've been so busy lately I haven't had time to post, but I have a lot planned for 2015! We are knocking down walls at +Galveston Bay Beer Company in preparation for putting in a taproom where the thirsty masses can come and try all our brews, including some special small batches that won't be found in bars.

This week alone I am brewing up my rye saison, a pale ale, a smoked kolsch, and a gose. I have plenty more ideas for some experimental brews and having a taproom to put it in is going to make it all the more exciting. Currently, I have three different beers at the local bars and I am getting some great feedback on them. Going to be doing a tap takeover at The Republic House on Tuesday so that is going to be fun.

After a long day of brewing I head out to the bar and order a pint of my own beer. Damn, it feels good to be a brewer.
