I love ❤ to start my day with a cup of hot ginger tea☕ . Just water infused with fresh ginger, honey and some lemon juice. Some days I add a few leaves of fresh tulsi and cinnamon or cloves.

It soothes my mind and gives a calm start to the day. 
Ginger is among the most widely used and best studied of all kitchen cures. A cup of ginger tea not only warms you in this weather but actually heals and rejuvenates the body from inside out.

It's good for just so so many things. Beyond nausea and tummy ache, ginger helps in reducing arthritis pain, blood clots, heartburn, headache, cold & flu, indigestion, coughs.

Taking fresh ginger in tea is like giving your body that natural immunity booster. I also add ginger to most of my curries, stir-fry and soups.

Here's to a cup of good health! ☕

I love the simple and delicious pumpkin fry at this time of the year! This recipe is very simple. (You can also read the full recipe on my blog at: https://www.myweekendkitchen.in/kaddu-ki-sabzi-indian-style-pumpkin-fry/)
Ingredients
250 g pumpkin peeled and cut into bite sized cubes
300 g tomato puree (of about 6 medium sized tomatoes)
4-5 curry leaves
1 pinch asafoetida (hing)
1 tsp cumin seeds
2 tsp coriander powder
½ tsp red chilly powder (optional)
½ tsp turmeric powder
Salt , to taste
½ tsp garam masala powder
2 tbsp vegetable oil

for garnish
7-8 sprigs fresh coriander leaves (cilantro)

Instructions
-In a heavy bottom pan, heat oil on medium heat. Once the oil is hot, add asafoetida and cumin seeds.
-When the seeds start to sputter, add curry leaves. Sauté till the curry leaves become crisp.
-Add the tomato puree and all the powdered spices except garam masala powder. Mix well and cook covered for a couple of minutes.
-Add the pumpkin pieces. Mix well so that all of the pumpkin is coated in the tomato mix.
-Cook covered, with in-between stirring, for about 10 minutes till the pumpkin has softened. If the preparation is very dry and is sticking to the pot, add just a little dash of water in between.
-Add garam masala powder, mix well and keep it covered for a minute.
-Garnish with fresh coriander and serve hot with parathas.

One of my favourite vegetarian dish in Indian food is potato curry! In this recipe I have used coconut milk and curry leaves seasoning.

Coconut milk is such a healthy and tasty alternative to milk cream in curries.It adds a delicious creaminess to the recipe.

A great idea to bake dinner in one-pan! I love the colours and mix in Julia's dinner menu.. I am going to replace the meat with more veggies and this would make a healthy movie-night dinner-for-two!
