20% sprouted spelt and water that I had reserved from boiling potatoes the day before… Followed the tartine bread book instructions… Quite successful, open/soft crumb with a nice nutty flavour and crispy crust. My mother always used to use the water from her Norwegian potato dumplings when making her sandwich loaf growing up and I believe the extra starch in the water contributes to a silkier texture
