Their pronunciation is Ecclesiastical Latin. It's the modern de facto standard for sacred choral works. There are other regional pronunciations in use, and those are typically reserved for "historically-informed" performances or are left up to the composer, arranger, or director.

Since, afaik, the arranger is singing in this video, I assume they're performing how he envisioned the piece. :)
