This is great Chris! It's so important to share our stories for those who may feel they are struggling maintaining a proper vegan diet. Vegan junk foodies need to find a balance and understand that they still need to eat more fresh fruits and vegetables than processed vegan transition foods; which are meant to be consumed temporarily and should be eaten sparingly in the long haul. and I are currently eating a veganic raw-till-four diet since the beginning of August and it has made a huge positive impact on my health in a short period of time.
Coming from eating too much vegan junk foods the last couple of years I've developed many food intolerances and chronic inflammation, which I have now conquered eating a whole foods plant-based diet. So there's definitely no going back to the unhealthy vegan version of myself, It's a way of life and it feels amazing!
Btw I was vegetarian for 20 years and we will be vegan 3 years this December!
Everyday is a learning experience, which I welcome with open arms and I hope to inspire and help others along the way.
