Here's an easy weeknight meatless pizza to add to your weekly dinner menu! It was rated a 10+ by my kids!
Pizza, Pizza, Pizza! How I love pizza! I truly do! Pizza is one of my favorite things to chow down on! I’m a total carboholic and cheese fanatic, so with pizza, I get the best of both worlds. Also, you get to be creative with pizza and top it with whatever your heart desires, and these past... Read More »

Homemade almond joy and mounds bars! These are super easy to make, kid approved, gluten-free and vegan! The perfect guilt-free dessert!
I teased some of you late this summer on Instagram and Facebook with photos of these homemade Almond Joy and Mounds bars.  Many of you were asking for the recipe like NOW, but I couldn’t give it out just then because I was photographing and getting it ready for Marin Magazine.  Well, the magazine called... Read More »

Easy oven sweet potato fries! These fries are SO GOOD, SUPER ADDICTIVE and honestly as easy to make up as the frozen variety (and cheaper too). I’m serious! They’re browned, caramelized and slightly crispy on the outside, and soft, sweet and tender on the inside. Yum Yum! They're kid and mom approved!

Yum, Yum!  I will admit that these fries are not going to be crispy, like fries that... Read More »

Just posted this amazingly easy 5-minute roasted Brussels Sprouts recipe. These Brussels are charred, crispy and caramelized on the outside, and soft with a bit of resistance (not mushy) on the inside. I even made things a bit healthier and used extra virgin coconut oil to roast these bad boys. Come on and check it out...

Here's a simple "how to" post on roasting chicken!  This is my go to technique for any recipe that calls for shredded or cubed chicken!
So here’s an simple question for you all.  How many of you buy a rotisserie chicken for a recipe that calls for shredded chicken, but end up just using the breast meat, and then tossing the legs and thighs? Hmmmm… I know that last sentence sounds a bit risky for a food blog, but you all... Read More »

I know it’s a bit bold to say that these are the best corn muffins, but in my humble opinion they are. I’ve sampled many corn muffins over the years, and these bad boys are basically what a corn muffin should taste like. They’re moist, a bit sweet and savory and have a nice texture and crunch from the cornmeal.

Marin mama is going crazy over 5-minute skillet veggies! Here's an easy and quick way to roast up cauliflower! I think I'm starting a new trend here!
Ok, so I know I’m going a bit crazy with this whole 5-minute skillet veggie concept, but I’ve come to realize that I tend to get a bit obsessed when I find something I like/love, and I love this new 5-minute technique.  In my last post I showed you all how to cook 5-minute roasted Brussels sprouts, and... Read More »

My weekly menu is up!  Come check out our weekly menu and see why Eli is giving a thumbs up to Lucky Charms :)
First off, I need you to all know that this is totally not a Marin mama approved cereal.  I had to post this as my opening shot though because I thought it was hilarious that a somewhat healthy food blogger like me has a photo of their son giving the thumbs up to a box... Read More »
