Dr. O'Bryan: “Number two in the trilogy is environmental toxins, environmental exposures, the straw that broke the camel’s back. And you heard some of our scientists talking about 'loss of oral tolerance'. If you go back and you listen to the Gluten Summit interviews again loss of oral tolerance means basically the straw that broke the camel’s back. We can’t adapt anymore. Now when we’re exposed to that environmental trigger, whatever it is, now it’s going to start causing a problem. It’s going to start a reaction in the body. That’s the loss of oral tolerance.
And the most common environmental triggers in the development of autoimmune mechanisms that’s been identified in the literature - there are two that are neck and neck and undisputed, they contribute to the development of autoimmune conditions - are gluten and lipopolysaccharides, the exhaust, if you will, from bacteria. And what we’re talking about is gluten, that’s what the webinar focused on.”
