My Tropical Citrus Grilled Chicken is one of my favorite grilled chicken recipes because it has all the flavors that I associate with a meal that is inspired by a tropical climate ... citrus, pineapple, garlic and cumin. So delicious!

My favorite Nicaraguan dessert, now I can make it at home!
My Drunken Tres Leche Cupcakes are filled with delicious 3 milks; cream, evaporated and condensed then topped with a swirl of creamy meringue. I also wanted it to have a bit of a "kick" in the form of a little rum (okay, a lot of rum). My recipe makes the traditional cake totally portable in the form of a creamy  and very decadent cupcake.

I love Chinese Long Beans! Great way to use them!

Oh Yeah! Now this is my kinda dessert!
My Pumpkin-Banana Walnut Bread. with Butter-Whiskey Glaze produces an almost bread pudding like custard-y texture, that is warm, gooey and the whiskey in the glaze provides a nice little kick. The pieces of  toasted walnuts scattered through out, add an unexpected delightful crunch, coupled with the warmth of cinnamon, nutmeg and cloves, making it a slice of heaven on a fork.

Great and informative recipe! Now I know how to make Maduros!
Cuban Sweet Plantains (a.k.a  Plátanos Maduro Cubano or maduros) are sweet and the perfect side to go with most any meal, not just Cuban dishes. Battles have been fought over them at the dinner table to spear the personal favorite!

Oh MY! I am thinking this will be on the menu this weekend.
My Lemony Tuna Egg Salad, puts a  new spin on the regular tuna sandwich, most of us grew up on. Take it up a few levels by using Spanish or Italian tuna packed in olive oil, preserved lemon and you now have tuna sandwich for adults!
