Okonomiyaki can be referred to as Japanese pizza but it might better described as a savory pancake. Recipes for okonomiyaki appeared in areas of Japan prior to World War II but basic savory and sweet pancake recipes appeared centuries earlier. During and after the war, okonomiyaki became more and more popular as Japanese 'fast food' and the dish began to spread throughout the country. Areas like Osaka and Hiroshima claim okonomiyaki as their own and each area offers distinct variations on the dish. Kansai or Osaka style okonomiyaki features ingredients mixed together and grilled. Hiroshima style okonomiyaki features a crepe-like pancake with layer toppings. At Osaka Soul, you can expect the Kansai or Osaka style of okonomiyaki.
